2 cups torn kale, stems removed
1/2 cup extra virgin olive oil
1/4 teaspoon sea salt (or more to taste)
1 clove garlic
3 tablespoons lemon juice
1/2 cup raw almonds
1/2 cup fresh Italian parsley
1/3 cup parmesan, freshly grated
Prep:
1. Separate kale leaves from stems (see notes below for link to our quick how-to video).
2. Squeeze lemon juice.
1. Put everything in food processor and pules until combined. Depending on how you're planning to use it you may want to add a bit more olive oil (see notes)
Ways to use/eat:
1. Mixed with pasta or gnocchi (in this case combine with melted butter or add extra olive oil)
2. As a topping for homemade pizza (check out our 1 minute/ 2 ingredient pizza dough recipe)
3. As a salad dressing (add extra olive oil)
